Ham
In Germany, Black Forest ham is produced in the southwestern Black Forest region. It consists of ham (a pork cut – from the upper leg) cured for weeks in a salty brine, seasoned with juniper berries, garlic, coriander, and black pepper, then aged and smoked over a three-week period.
