Jam
Not all fruit is ideal for making jam — this depends on the pectin content of the fruit used. Pectin is a sugar acid that consists mainly of galacturonic acid and is used as a gelling agent in different foods. Fruit high in pectin include apples, currants, blackberries, raspberries, and concord grapes.
Jalapeno
Though they may be too spicy for some, jalapenos are relatively mild compared to other peppers. They contain on average 2,500 to 8,000 Scoville Heat Units (SHUs), whereas cayenne peppers average 30,000 to 50,000 SHUs and habanero peppers average 100,000 to 350,000 SHUs.
Jackfruit
Jackfruits are related to fruit like breadfruit, figs, and mulberries. Native to southern India, they are a popular meat substitute for vegans and vegetarians worldwide. They are a large fruit — weighing up to 80 pounds.
Jerk Chicken
Jerk chicken derives its name from the Spanish word charqui, which itself describes the smoking and grilling practices of the Taino people. In Jamaican cuisine, chicken is marinated with scotch bonnet peppers and allspice, then smoked over burning green pimento wood.
Jelly
Jelly differs from jam in that it is strained by fruit pulp and flesh. In the making of fruit preserves (like jellies and jams), crushed fruit is boiled with sugar and water and then cooled to reach a congealed consistency. Jelly, therefore, is a clear, gelatinous form of fruit preserve.
Jambalaya
Jambalaya comes in what are considered Creole and Cajun forms. In Creole jambalaya, tomatoes are added to the rice dish, whereas in Cajun jambalaya, they are not. Unlike Creole jambalaya, ingredients of Cajun jambalaya (meat, vegetables, rice) are stewed together simultaneously.
Jambon
In French cuisine, a type of sandwich known as a Jambon-buerre (“ham with butter”) consists of slices of ham placed on a buttered baguette. A typical ham used in the sandwich is Jambon de Paris, a smoked, lightly-salted, lean, and mildly-spiced ham.
Johnnycake
Johnnycakes are enjoyed in several different countries including Jamaica, Australia, the Bahamas, the United States, and the Dominican Republic. In the U.S., they consist of cornmeal mixed with milk or water, and salt, and fried in oil in a cast-iron pan.
Jordan Almonds
Jordan almonds are also known as dragees, confettos, or koufetas. They are almonds that have been coated with a thin crunchy layer of sugar and dyed various colors. They have their origins in Mediterranean Europe and the Near East.
Jollof
Jollof, or Jollof rice, is a West African dish of rice, vegetables, meat (such as chicken, beef, or goat), and occasionally seafood. Known also as benachin, ceebu jen, or riz au gras, it is popular in several countries, among them Ghana, Nigeria, Senegal, the Gambia, Benin, Mali, Liberia, and Cameroon.
Jiaozi
Jiaozi are Chinese dumplings consisting of ground meat and vegetables. Though eaten year-round, they are especially enjoyed during Chinese New Year celebrations.
