Noodles
In Turkish cuisine, Kesme is a type of egg noodle made of egg, flour, water, milk, and salt. It is prepared primarily at home, and it is often an ingredient in a stew containing ingredients such as onion, carrot, tomatoes, lentils, and meat.
Nuts
When nuts are the botanical fruit of a plant that are hard-shelled and dry, they are known as true nuts (acorns, chestnuts). When nuts are the inside of a seed that itself is found within a fruit, they are called drupes (walnuts, almonds, cashews). Peanuts are not nuts, but legumes.
Natto
Natto is a fermented soybean dish that is Japanese in origin. When boiled soybeans are exposed to a bacteria known as Bacillus subtilis, their sugars ferment into a sticky, stringy mass. Natto is a significant source of protein, manganese, iron, calcium, and copper.
Naan
Naan is a flatbread that is Indian in origin and contains flour, water, leavening (yeast), and sometimes milk or yogurt. It is cooked in an oven called a tandoor and is served alongside curries and other main dishes. It is popular throughout the Indian diaspora and enjoyed worldwide.
Navy Beans
In the United States, a bean soup known as Senate bean soup consists of navy beans, water, ham hocks, onion, butter, and sometimes, potatoes, celery, and parsley. The soup has been served in the Senate dining room every day since at least the early 20th century.
Nachos
Nachos were invented by restauranteur Ignacio “Nacho” Anaya in Piedras Negras, Mexico, in 1940. When asked to create a new dish for his customers, Anaya took fried tortilla triangles and covered them with melted cheese and pickled jalapenos. This dish was originally known as “Nacho’s Special”.
Nectarines
Nectarines are the same species as fruit from the peach plant (Prunus persica). Unlike peaches, they are smooth-skinned and do not have “fuzz”. They are a peach cultivar and are considered to be sweeter and smaller in size when compared to peaches, on average.
Neufchatel Cheese
Neufchatel cheese is a soft cheese that originated in France — and is named after Normandy commune of Neufchatel-en-Bray. It is made from raw milk and salt — and forms a soft white rind when aged completely. The cheese, which is standardized in France, is sold in heart-shaped formations.
Nori
In Japanese cuisine, Nori is an edible seaweed product derived from red algae species like Pyropia tenera. Nori is produced by shredding, mixing, and reforming seaweed into thin sheets — in a process not unlike papermaking. It is used in sushi and onigiri (a shaped-rice and pickled vegetable food).
Nougat
Nougat is a confectionary that is Middle Eastern or Central Asian in origin. It is made variously from sugar, honey, roasted nuts, egg whites, and occasionally candied fruit. Nougat can be made with or without egg whites and is sometimes combined with chocolate.
